chicken pitas

Whew! I don't think we've managed to get out of the 90 degree weather in a few weeks now. Here's an easy, cool dinner idea for you for those hot and humid evenings. Paul gave me the recipe for the chicken pitas. His family always made these when he was growing up. We love the chicken pitas and I hope you do too.

What you need:
chicken tenders
pita bread
lettuce
tomatoes
shredded cheese

1. Marinate the chicken tenders for about 15 minutes in olive oil and some italian seasoning (Italian salad dressing works well too)
2. Take the pita bread and cut it in half - set aside
3. Grill the tenders for about 10 minutes at 350
4. Cut the grilled tenders into bite size pieces
5. Take your pita half and fill it with chicken. Add cheese, lettuce and and tomatoes
We topped ours off with some sour cream and salsa. Serve with pasta salad.

father's day and yoforia

I'm out of town this weekend so we decided to celebrate Father's Day last night. The weather was perfect. We enjoyed dinner outside at Nolen Kitchen and then headed to yoforia for some frozen yogurt. I love this place! If you haven't been, you just have to go.
I love that you can add fresh fruit to your yogurt!


Grandaddy loves his grandbaby.


I'm so blessed to have the greatest dad on earth! Thank you for always filling our home with lots of love and laughter dad. I love you.

lake day

We had yet another beautiful weather weekend in the Carolinas. A little on the humid side, but otherwise just lovely. We spent some time on the lake this weekend. I grew up playing on Lake Norman and our family stills does to this day. I love the beach, don't get me wrong, but there is something so great about the lake.
Leighton (my niece - just in case you're new around here) loves the lake too just like her mommy and me.

This is really funny. See the 80's-ish life jacket that Leighton has on? Well it's vintage! Both me and my sister wore that thing. I sort of wish I could find a picture of me and my sister in that life jacket just so I could show you. It still does the job.
We enjoyed eating fresh cherries...
and swimming in the water (the girls dangled their feet in the water and the boys and Leighton swam:)

I couldn't resist this picture. What a relaxing day on the lake! Now it's back to another work week.

...my husband will be glued to the TV because of the 2010 World Cup, which means that no work will get done around the house. Oh goodness! At least it only comes around every 4 years and it is pretty exciting to watch.

peach cobbler

Homemade peach cobbler always makes me think of summertime. I guess because that's when my mom always made it. It's the perfect dessert. Paul and I enjoyed ours last night (and I enjoyed a little this morning too:) If you've never made one, you should. It is very easy.

What you need:
7-8 peeled and sliced peaches
1 cup sugar
1 cup self rising flour
1 cup milk
1 stick of butter

Preheat oven to 350
Melt butter in baking dish in the oven
Mix together the flour, sugar and milk
Pour peaches into the melted butter mixture and then pour the batter over the peaches
Bake for 35 min.

You won't be disappointed!

the past couple of days

We've had a great past couple of days. We started the holiday weekend off celebrating Paul's Grandma's 83rd birthday. We would appreciate your prayers for his grandma as she was just diagnosed with sudden onset leukemia. Everyone had a great time at the party despite her diagnosis. She is such a strong and positive person and I admire that!


For the remainder of the weekend, we spent time in the mountains with my family. The weather was perfect. We enjoyed hiking and eating alfresco:)


Lastly, we took advantage of the Memorial Day weekend sales. I have been keeping my eyes open for a china cabinet for a while now. I found a great deal on this one at the Broyhill Outlet in Hickory, NC. It was 70% off. I still can't believe what a great deal we got. If you are ever traveling up hwy 321, you should check out the store. You never know what you'll find.
