ideas for mom

Mother's Day is just around the corner. My sister and I were just talking about that today and we figured out what we are giving our mom. I'm making a little something too, but I can't share that with you right now because I think my mom occasionally reads the blog:) If you are struggling to come up with some ideas, I think I may have a couple good ones for you.

I have the red one and I love it. I know your mom would love it too.

beef, mushroom and onion tart

If you are like us and eat a light dinner on Sunday nights, then you might enjoy this recipe which can also be found here.

All you need:
lean ground beef
8 oz pkg. of sliced mushrooms
1 medium red onion cut into thin wedges
1/4 tsp salt
1/4 tsp black pepper
1 pkg. refrigerated pizza dough (I used Pillsbury's classic dough)
crumbled blue cheese
dash of oregano

Heat the oven to 425. In a skillet cook the beef, mushrooms, and onion over medium heat until the beef is browned. Drain, then stir in salt and pepper.
Grease large baking sheet. Unroll the pizza dough into a rectangle. Put the beef mixture on top of the dough, keeping the filling within 1 inch of all edges. Fold edges over the filling. Bake the tart for 15 minutes.
Top with blue cheese and sprinkle with oregano.
What a nice light and tasty dinner!

target, you've done it again...

I walked into Target the other day and to my surprise I saw a whole section of Caldrea products. The countertop cleaner is my favorite, but I picked up this kitchen candle and it makes my kitchen smell so so fresh! Way to go Target!

disney vacation

I apologize for the delay in posting these pictures, but I took 608 pictures (seriously!) and it has taken me a while to get through them all. We had a wonderful time in Disney World. I hadn't been since I was a kid and it truly was a magical place. Paul and I felt like kids all over again. I hope you enjoy my very condensed account of our trip.

My sister, niece, parents and I rode together and the boys soon followed after work. Luckily we decided to break the trip up by staying in Jacksonville for the night. What a great city. We had dinner on the water and walked around San Marco.

We got up early the next morning and headed for Orlando in our Disney t-shirts and all. After a two hour drive, we arrived at our hotel. It was a great hotel and really close to the monorail, which was very convenient for us.

It didn't take us long the first day to hit the monorail and head to the Magic Kingdom. Leighton and Daniel enjoyed there first ever ride on the monorail (yes, Daniel had never been to Disney World:).

We rode all the classic rides on our first day: Swiss Family Robinson tree house, It's a Small World, and Cinderella's Carousel.

'Hmmm. Where should I go next?'


The next morning we all went to the 'character breakfast'. It was so much fun just to watch Leighton's face. She loved the breakfast and the characters. Who am I kidding, we loved it too!



Let me back up just for a second. Even earlier that morning Ashley, Daniel, Paul and I decided to go into the Magic Kingdom to ride a couple rides. You see, neither Ashley and Daniel nor Paul and I had ever ridden a roller coaster together. Isn't that crazy? So we decided that our first roller coaster together would be Space Mountain. What a great first roller coaster to ride together.
After our character breakfast, we finished up riding the classics at the Magic Kingdom.
Dumbo and
the Mad Tea Party were highlights of the day.

After our second day at the Magic Kingdom, we had dinner at the California Grill. The restaurant is located at the top of the Contemporary Resort.
It had a wonderful view of Magic Kingdom.

The boys enjoyed Magic Kingdom's late night hours later that evening.

We spent our third day at Epcot. I don't remember liking it that much as a kid, but I really really enjoyed it this time.
We rode many fun rides such as The Seas with Nemo and Friends, Living with the Land, Soarin', and Spaceship Earth.

I really enjoyed the tour of the countries.
We visited Mexico,

Italy,

China,

Germany, Canada, England, and we ended the day in France. We ate dinner at Les Chefs de France.

Our last day at Disney was spent at Hollywood Studios. We rode the Rock 'n' Roller Coaster and the boys rode Tower of Terror.
We also saw Playhouse Disney. Leighton loved seeing all her favorite characters.


Disney World was such a blast. Hopefully we can visit Mickey and Minnie again in just a few years.
