sugar and spice and everything nice...

Yes, baby Summerville is a GIRL! We are very excited. We went this afternoon to find out. It was Paul's first time seeing the baby and hearing the heartbeat so it was pretty exciting. For some reason we were both thinking the baby was a boy, but indeed it is a sweet little girl and we couldn't be happier!

We had our families over for dinner for a PINK and BLUE party. We asked that they wear whatever color they thought baby 's' was. Once everyone arrived, we changed and came downstairs wearing our PINK!

chicken enchilada casserole

Here's a delicious mexican dish for you!

What you need:
1 boneless skinless chicken breast cut into thin bite size strips
1/2 medium red bell pepper, finely chopped
1 can Progresso Light Southwestern-style vegetable soup
1/4 cup uncooked instant brown rice
1 oz fat free cream cheese, cut into cubes
3 tablespoons Old El Paso refried beans
4 corn tortillas (6 in)
1/3 cup shredded mild cheddar cheese

Heat oven to 350 F. Cook chicken and bell pepper over medium/high heat in skillet for 4-6 minutes until chicken begins to brown.


Stir in soup. Heat to boiling. Reduce heat to low, cover and cook for 10 minutes.

Stir cream cheese into chicken mixture until well blended.

Spread 1 tablespoon of the refried beans on 1 tortilla, place beans side up, in bottom of ungreased 1-quart casserole dish. Top with 1 cup of chicken mixture, sprinkle with 1 tablespoon of cheese. Repeat 2 times.

Top with remaining tortilla and sprinkle with remaining cheese. Cover and bake 20-25 minutes.

It serves about 3 and it's delicious!

6 weeks apart...

Well, I have more exciting news to share. Me and my sister are both expecting and we are exactly 6 weeks apart! How fun is that?!?! Leighton will become a big sister sometime around September 3rd. I can't wait to be an aunt again. Congrats Daniel and Ashley...and Leighton!

nursery for triplets

We find out next week if we are having a boy or girl so I've been thinking about what we'd do in the nursery for either. I came across the photo below while looking at several nursery designs. Can you imagine? The thought of planning for one is a little overwhelming. I can't imagine planning for three! Check out more photos of this lovely nursery here.

my sweet valentine

Happy Valentine's Day folks! Here is my sweet valentine who I love dearly. He is the sunshine of my life and I don't know what I'd do without him. We celebrated Paul's birthday over the weekend too. He got a griddler for his birthday which he was thrilled about, as was I! On Saturday morning we made blueberry pancakes to try the griddler out. It worked perfectly and the pancakes were delicious.

My aunt gave my sister and I the piece of pottery pictured above. It's called a berry bowl. I'm not sure where she found ours, but I've seen some here if you are interested.

girls weekend and baby 'S' update

Hey there! I know, it's been a while. This past weekend I had the chance to go to Atlanta to spend some time with my college roommates. I lived in an apartment for two years at Clemson with a Lauren, Lauren and Laura. Seriously, I was given the wrong name! These three girls are amazing. They challenge me in so many ways and we always have a great time together. When I got down to Atlanta on Friday night, they had these little goodies waiting for me. As you can see they had made a Clemson diaper cake and had wrapped the gifts in pink and blue raffia...both of which I loved!


It was so refreshing to see them and have some girl time. We ate good food, shopped and walked around Virginia Highland and visited Lauren B's church - amazing by the way. I'm so blessed to call these ladies my friends. Despite living in different states and juggling our ever-changing lives and busy schedules, we always manage to spend at least one or two weekends a year together. I hope we continue this tradition for the rest of our lives. Love you girls!


In baby news, the bump is growing. I'll try to be better about posting bump pictures. I feel like I just woke up one day last week and the little bump appeared. Crazy how that happens. I haven't felt baby 'S' kick yet, but I can't wait until I do. We find out in just two short weeks if baby 'S' is a boy or girl. Can't wait.
